Pumpkin with Rice and Fruits
Tasty and beautiful dish, great idea for fall and Thanksgiving. You can add any fruit, including grapes, melons slices, currants, etc. Sugar can be replaced with honey and water with milk. Before serving, mix the rice with pumpkin, scraping it with a spoon from the walls of the pumpkin. If you don’t like rice with fruits, substitute meat instead, and add different herbs.

Ingredients
- 1 medium pumpkin about 2.5 kg(5.5lb)
- 1 apple
- 80 g (2.8oz) raisins
- 60 g (2.1oz) dried apricots
- 10 mint leaves
- 0.5 tbsp sugar
- 1 tsp grated ginger
- a few pinches of cinnamon
- Basmati rice
- 40 g (1.4oz) melted butter
- brown sugar to taste
Instructions
- Wash the pumpkin, cut off the top. Clean pumpkin seeds from the inside and scrape the walls. Fill the pumpkin completely with boiling water, cover and let cool, then drain.
- Remove core from apples and cut into medium pieces. Cut the dried apricots and prunes into 2-4 parts. Add raisins, grated ginger, cinnamon, sugar and mint. Mix well.
- Clean rice and boil it in salted water until a little more than halfway done. Drain and mix the rice with dried fruit. Put into the pumpkin, pour the melted butter in the top and hot water, to completely cover the rice.
- Put the pumpkin on a baking sheet, brush it on the outside with oil, and cover with foil. Cook in oven at 180'C (360F) about an hour, then remove the foil, stir rice, cover with the top of pumpkin and cook another 30 minutes. Sprinkle the finished dish with brown sugar.
