Pork Tajine with Sweet Potatoes

  1. Soak the saffron in 1 tbsp. boiling water. Cut the meat into medium cubes.
  2. Place the tagine on the divider, heat the oil, put large cubes of onions and chopped garlic, and fry over high heat until golden brown.
  3. Add chopped bacon and fry for a couple of minutes. Then, add mushrooms, and after a couple of minutes the potatoes and fry for another 5 minutes, stirring all the time. Since my tajine is not very large, I fried the meat separately in a pan on high heat, and then add it to the vegetables. Add salt, the rest of all the spices and herbs, and mix well. Add a little broth, but it should not cover the meat and vegetables completely.
  4. As soon as everything boils, reduce the heat, cover, and cook for about 15 minutes. Stir and cook covered another 10-15 minutes, until the potatoes are ready.
  5. Turn off the tagine and leave it under the lid for 15 minutes. Serve with chopped herbs.
