Ingredients
- 2 duck breasts with skin
- 4 sprigs of mint
- 4 sprigs of thyme
- 0.5 tsp honey
- zest and juice of half lemon
- salt, pepper to taste
- 2 tbsp white wine
- 2 tbsp melted butter
- 1.5 tbsp plum syrup or jam
- 1.5 tbsp fig jam
Instructions
- Wash and dry the duck breasts. Finely chop the mint and thyme and divide into two parts. Mix in a bowl the melted butter, honey, zest of lemon, mint and half the thyme. Rub the duck breasts with the mixture, and salt and pepper and arrange on a baking pan. Add wine and cook in preheated oven at 200'C (390F) for about one hour. While cooking, use a spoon to take the juice and drizzle back over the duck breasts occasionally, this will help flavor and keep the breasts moist. Then put the breasts on a plate, cover, and leave for 10-15 minutes.
- In a small saucepan put plum and fig jam, add the lemon juice, stir and cook over very low heat until boiling. Add remaining mint and thyme, stir and turn the heat off. Cover with a lid and leave for 10-15 minutes.
- Cut the duck into strips, put on a plate, and pour the sauce on top.
