Chicken Yakitori
My family and I love chicken yakitori, its an easy dish with so many subtle variations that change the flavor. This version is one of our favorites and is the most basic. Soak the wood skewers for at least an hour before grilling. You can cook with chicken breast or thighs but the best flavor comes from thighs and this is the most traditional meat to use, its more tender and has better flavor.

Ingredients
- 3 tbsp soy sauce
- 3 tbsp Mirin
- 2 tbsp Sake
- 1 tbsp sugar
- 3 chicken thighs or chicken-breast boneless
- chives or green onion, sliced diagonally
Instructions
- Mix the soy sauce, mirin, sake and sugar in a saucepan and bring to a boil. Reduce the heat and cook another minute, then remove from the heat and let cool. Pour 1/4 of the sauce into another bowl, this sauce will be served with the finished meat.
- Slice the chicken into medium pieces and skewer. Place over a hot grill and brush with the marinade continuously, and rotate. They will cook quickly, about 5-10 minutes. Remove from the grill and sprinkle with chopped green onion and serve with the extra sauce.
