Ingredients
- 3 chicken breasts
- 2 tomatoes
- fresh basil
- mozzarella
- garlic powder
- salt, pepper
- olive oil for frying
- 3 tomatoes without seeds for the salsa
- 2 shallots for the salsa
- a little cilantro for the salsa
- 1-2 cloves of garlic for the salsa
- 1 chili pepper for the salsa
- 1 mango for the salsa
- 1 lime juice for the salsa
- salt for the salsa
Instructions
- Wash and dry chicken breast and then make a butterfly cut on the chicken breast (be careful not to cut it all the way in half). Then place the breast under a sheet of plastic wrap and beat a little with a mallet to flatten it. Salt and pepper each breast and follow with a little sprinkle of garlic powder. Cut the mozzarella and tomatoes into slices. Put mozzarella on each half of chicken breast, then add the tomato slices on top, followed by basil leaves. Fold the chicken breast to cover this side and then add salt and pepper.
- Heat olive oil in a pan and fry the breasts on both sides until golden brown. When done, place in an oven at 390F about 20 minutes.
- While preparing chicken in the oven, you can start to prepare the salsa. Finely chop the tomatoes, shallots, garlic, chili and cilantro, peel the mango and cut into small cubes. Mix all in a bowl, and pour lime juice on the top mixing well. Season with salt and cover it. Place in refrigerator until serving.
- Plate each cooked chicken breast with salsa on the side, garnishing with basil leaves.
