Chicken Baked in Pumpkin with Rice

I’ve already baked rice and vegetables inside a whole pumpkin (Pumpkin with Rice and Fruits and Vegetables, baked in a pumpkin), but here is another idea, this time with chicken and rice. Aromatic, flavorful, tasty and satisfying dish, great idea for the fall season or Thanksgiving.

Chicken Baked in Pumpkin with Rice Recipe

  1. Boil the rice in a salted water until a little more than halfway done, usually about 10-15 minutes.
  2. Wash the pumpkin and cut off the top. Clean the pumpkin seeds from the inside and scrape the walls.
  3. Cut the leeks and apricots, then cut the chicken into portions, season with salt and pepper and sprinkle with garlic powder.
  4. Heat the butter or vegetable oil and fry the onion for 1-2 minutes. Add the onions, dried apricots and raisins to the rice and mix.
  5. Fry the chicken in a pan on all sides until golden brown, about 10 minutes.
  6. First add the rice to the pumpkin, then top with the chicken pieces, and cover with the top of pumpkin. Spread butter on the sides of the pumpkin, cover top with foil and bake in a preheated oven at 180'C for an hour, then remove the foil and cook for another hour. Serve everything from the pumpkin.
