Carne Asada Tacos

Carne asada just means ‘grilled meat’ but it often made from thin flank steak.  The meat is marinated in olive oil with salt, lime juice, garlic powder, pepper, and then grilled. One of the most popular ways to eat Carne Asada is with corn tortillas as tacos or just as itself. There are endless varieties and toppings to serve with Carne Asada Tacos but my favorites are grilled onions, fresh pico de gallo and guacamole.

    1. Prepare the above ingredients (see related recipes). For the grilled onions and peppers, it’s usually easier to cook these on a stove top grill but is tastier to cook on a wood grill, just be sure you have a grill with small holes or the pieces will fall through. The onions and peppers only need to be cooked a couple of minutes. Sometimes when they are done grilling I’ll chop them further. For the corn tortillas, it’s best to grill these as well. Just set on a grill and cook for about a minute each side, until just turning brown. This will hold the meat and ingredients better. Then just add the toppings you wish. You can also squeeze fresh lime or chipotle flavored mayonaisse as well.
