Halushki, Lazy Vareniki (Gnocchi)

These delicate cottage cheeseĀ dumplings are from my childhood, my mother and grandmother cooked them often. The recipe is very simple, quick and easy to make, so they are also called ‘lazy vareniki‘. Cottage cheese can be substituted with ricotta cheese. Halushki, Lazy Vareniki can be served with butter, sour cream, honey, jam or puree of fresh fruit and berries. This is a fun dish to cook with kids, its very simple to do and hard to make a mistake. You can freeze them as well so be sure to make plenty, they won’t go to waste (just don’t cook them before freezing).

Instructions

  1. Combine the cottage cheese, egg, flour, sugar and salt in a bowl. Grind with a fork first, then knead the dough by hand. Pour a little more flour to the dough if necessary. Divide dough into 4 pieces.
  2. Roll each piece on floured cutting board into a tube about the thickness of your thumb, then cut with a knife into small cubes.
  3. Cook in small portions in salted boiling water, mix gently at first. Once the dumplings float, cook for another 1-2 minutes. Take them with a slotted spoon, put in a bowl, add a small piece of butter, and cover with a lid. Prepare the next portion.
