Grilled Chicken Wrapped with Leeks and Bacon

I like to grill chicken thighs because the meat is not very dry when it’s ready, but with this recipe you can cook chicken breast too. Wrapped in bacon the chicken will not burn and the meat will stay moist, saturated with the flavor from the bacon. Juniper berries and leeks give an original flavor to the chicken.

  1. Sprinkle the bacon with crushed juniper in a mortar. Cut the leeks in half lengthwise and put the large leaves in boiling water for 2 minutes. Drain. Cut boneless chicken into medium cubes, salt and sprinkle with paprika. Wrap each piece of chicken in leek leaf, then a strip of bacon. Skewer 4 slices on a thin skewer and cook on the grill, all the while turning for 6-8 minutes.
