Carne Asada

The dish is commonly prepared in the northern and western parts of Mexico and in the American Southwest. Carne asada means ‘roasted beef’ but in reality it’s cooked on a grill. Before grilling, the meat is marinated in an olive oil with salt, lime juice, garlic powder and pepper. It’s best to use flank steak or thin pieces of meat. The finished meat is usually used in tacos, burritos, quesadillas, served with fresh guacamole, grilled onions, pico de gallo, black beans and fresh salsa.

  1. A few hours before grilling meat, rub olive oil on the meat along with lime juice to marinate. Heat a grill very hot and just before placing the meat on the grill, add the sea salt and pepper. It’s important to use sea or kosher salt on the meat and always best to use fresh crushed pepper. Cook for about 5 minutes on each side and then remove from the grill and let rest for 10 minutes, then slice into thin strips. By the time it’s sliced, it will be eaten )
