Summery Salmon Carpaccio with Icelandic Herbs

Summery Salmon Carpaccio with Icelandic Herbs, another great recipe found in Icelandic cookbook in Iceland. of course, I didn’t had all the herbs I need for the recipe, but added some tarragon, little bit rosemary. Next time will try to check the spices on Amazon or better will visit this beautiful country again and buy there 😀

1 small fillet of salmon, I used steelhead, also olive oil, lemon juice, salt (I used Icelandic liquorish salt), zest of lemon. This recipe also asked for Icelandic wild herbs, such as bilberry blossoms, sheep’s sorrel, moss campion, heartsease, fine birch leaves.
