Oven-baked duck with caramelized apples.
I marinated it for 24 hours in soy sauce, orange and lemon juice and zest, white wine, thyme, garlic, a cinnamon stick, a bay leaf, and black pepper. I baked it in a steamer bag ( I wrapped it first in baking paper and then tightly in foil ) for two hours at 180°C, then air-fried it for another 14 minutes, brushing the top with a glaze made of honey, soy sauce, hot pepper, orange juice, and lemon juice. Thanks to this method, the duck turns out very juicy, and the skin becomes wonderfully crispy. The flavor of the marinade also works perfectly with duck. I caramelized the apples with sugar in butter and added them to the duck at the end (this is now my favorite way to prepare apples for duck; they turn out very soft and delicious, soaking up the duck juices). Overall, an excellent recipe — I will definitely make it again.
