Tried a new recipe for salty salmon and I love it! Marinated salmon with orange, lemon zest, cognac

salmon around 1 kg, sea salt (not small) 4 tbsp, sugar 2 tbsp, orange and lemon zest, juice 1 orange, cognac, whisky, rom, or vodka 2 tbsp. marinate for 24 hr. in the fridge, clean with the water, dry and another 2 hr. in the fridge.  If you are doing slices, less time in the fridge, 6-12 hr.
