Lemon posset

Lemon posset, so easy to make and perfect for hot summer days!

3 lemons (juice and zest from 1 lemon, I used more juice), 250ml whipped cream, 3 tbsp sugar. Scoop out the pulp from half lemons. Sugar, zest and whipped cream bring almost to a boil. Add lemon juice, strain, pour over the lemon halves and place in the freezer for 2 hr. After decorate with zest and mint.
