Khachapuri today, the ‘real way’

We tried making Khachapuri today – the “real way.”
Usually, I bake them in the oven and they always turn out tasty, but today we experimented with our pizza oven — and even tried the smoker — just to see which method works best.
In the end, we agreed: next time, we’ll start in the pizza oven and finish in the smoker.
After the smoker, the dough puffed up beautifully. The crispy crust and the smoky flavor from both the pizza oven and smoker made them taste better than ever — even better than my usual oven version.
They reminded me of the real khachapuri I had as a kid, visiting my grandparents in Batumi, Georgia. That taste brought back such warm childhood memories.
