Garlic Oyster Mushrooms (Pan-Fried)
1. Heat olive oil and a little butter in a frying pan over medium-high heat.
2. Add oyster mushrooms in a single layer (don’t overcrowd).
3. Fry until golden brown, then flip and brown the other side.
4. Remove mushrooms to a plate.
5. In the same pan, add garlic and sauté briefly until fragrant (don’t let it burn).
6. Return the mushrooms to the pan, toss to coat.
7. Finish with a squeeze of lime juice and chopped cilantro.
8. Taste and adjust salt if needed
• Salt the mushrooms after browning so they don’t release water too early.
• A pinch of chili flakes or black pepper works great with lime.
• If you want extra umami, a splash of soy sauce or miso butter at the end is lovely
