Chipotle Lime Grilled Arctic Char or Salmon, Steelhead

We really love Arctic char, but it’s not easy to find, so steelhead is the closest fish I can use for my recipes — and honestly, steelhead is much tastier than salmon.
Yesterday I got a fresh steelhead and made a few dishes with it.
I marinated some of the steelhead in orange juice with orange and lemon zest, salt, sugar, and a splash of whiskey (or cognac).
I also prepared fresh steelhead with red onions, avocado, and cherry tomatoes, dressed with lime juice, garlic, chili flakes, anchovies, soy sauce, Worcestershire sauce, and olive oil.
And of course, I made Chipotle–Lime “Grilled Arctic Char” — but with steelhead.
Today was definitely a very tasty fish day!
