Today I made chicken Tabaka (tapaka). It's a traditional Georgian dish of a pan-roast chicken. You just need to have a young chicken, garlic, salt and pepper and use a clever method of preparation. The chicken is pressed as flat as possible in the pan and weighted down during frying so that it stays flat.
