Burger buns

1. Dissolve the dry yeast in 100ml of water to prepare the yeast. Mix with 100g of flour, knead and leave to rest for 1 hour. 2.Add the remaining flour, sugar, egg yolks, whole eggs, milk and start kneading with the mixer. Add softened butter and salt and you will get a compact and elastic dough. 3.Knead the dough into a ball slightly on the work surface. Let rise for 3 hours, or until doubled. 4.Divide the dough into balls and spread them on one side in the sesame seeds. 5.Transfer the sandwiches to the skillet, cover with a cloth, and let rest for another hour. 6.Dilute the egg white a little with a drop of water and brush over the sandwiches. 7.Cook at 190°C/374°F for 15 minutes.

100 ml of warm water; 7 g of dry yeast; 850g of flour 00; 40 g of sugar; 2 yolks; 2 eggs; 240 ml of milk; 50 g of softened butter; 20 g of salt; Sesame seeds; Egg white.
