Avocado

Avocado refers to the fruit, although they are often categorized as a vegetable. Smooth, buttery and healthy, they are protein-rich and also contain vitamins E, C, and B6, plus copper and iron. Ripe avocados can be stored in the refrigerator, unripe ones should be put in a paper bag with a banana to soften. There are many delicious ways to enjoy their creamy flavor in salads, dips, snacks, smoothies and milkshakes, ice cream, other desserts, served in sandwiches, white rice, in soups, mousses, sushi, on toast, or with chicken, meat, fish, shrimp and etc. The avocado is very popular in vegetarian cuisine, as substitute for meats in sandwiches and salads. Avocado can be combined with eggs (in scrambled eggs, tortillas or omelettes). Avocados soon discolor when cut, but sprinkling the cut surface
with lime or lemon juice will help prevent this.
