Rhubarb syrup, good for cocktails, iced tea or to drizzle over frozen desserts
Found a great recipe, Rhubarb syrup, good for cocktails, iced tea or to drizzle over frozen desserts. I used it in my ices Cream, yogurt, drinks. Also made popsicles from it, adding some juice.
Bring 1/2 cup sugar and 1/2 cup water to a boil. Add 1 1/2 cups grated rhubarb ( I used blender), reduce heat and simmer until fruit starts to fall apart and mixture thickens, about 5 min. Let cool 30 min. Strain into a container, cover and store in the fridge for up to 1 week.
