How to freeze zucchini
If you plant zucchini, you probably have them coming out of your ears at this point. And if you are thinking what to do with the insane amount of zucchini that are becoming ripe in your garden after cooking so many dishes already, you can freeze them for the winter season.
Cut the zucchini into small-medium bite-size. Blanch them in a boil water for 50 sec. Transfer the zucchini from the boiled water to a large bowl with an ice water bath to cool. Then put them in a baking sheet with a silicon baking mat in a single layer, dry with a paper towel and transfer in the freezer overnight. After that, put them in a bags or containers.
Keep in the freezer.
