Fish sauce Caramelized Wings
Caramelized wings is a Filipino inspired dish of chicken wings (1 kg) cooked in a mixture of honey (1/2 cup), fish sauce (3 tbsp), garlic (4 cloves, minced), 2 pcs birds eye chillies , finely chopped (I used hot pepper flakes), lemon juice (half of lemon) until it caramelized. First, in a non-stick pan add oil and chicken wings and stir fry until brown on all sides. Add honey, water (1/2 cup), lemon juice, garlic and hot pepper, bring it to a boil, cover the pan, cook on medium heat for 10 min, stirring all the time. After, on high heat, reduce the liquid to a thick consistency, stirring occasionally. Garnish with cilantro.
