Allspice

Allspice is a single berry from a tropical evergreen tree grown primarily in Jamaica. The berries are picked unripe, then are sun-dried until they resemble large brown peppercorns. While allspice tastes like a blend of cloves, cinnamon, black pepper, and nutmeg, it’s aroma is most reminiscent of cloves.
Ground allspice is an important seasoning in Caribbean cooking and main ingredient in jerk, a Jamaican spice blend used to flavor grilled meats. Allspice is also used to flavor sausages, pickles and baked goods.
