Wonton Ravioli

This dish is very similar to Russian pelmeni. Just as with the pelmeni, it’s better to mix the stuffing with two or three different kinds of meat, for example pork and beef or chicken, turkey. When they are ready they can be served with a sauce or just drizzle with olive oil and herbs. For people who like it hot, add chili. This recipe goes  well with a variety of sauces so if you feel like having Italian one night, you can serve with a tomato or pesto sauce, if you feel like Chinese you can serve with oyster or soy sauce and substitute the cheese with ginger. It’s an easy recipe to experiment with and very little chance you will go wrong.

  1. Bring a pot of well salted water to a boil. Once boiling reduce heat a little.
  2. To make the filling, place all ingredients in a large bowl, except for wonton wrappers, egg whites, and chives. Mix well with your fingers.
  3. To assemble wonton ravioli, place a wonton wrapper on a clean dry working surface and brush entire wrapper with egg wash. Keep remaining wonton wrappers covered while working to prevent them from drying out.
  4. Place 1 tablespoon of meat mixture in center of wonton wrapper and fold over, connecting the edges to the shape of a half moon. Be sure to push all the air out and seal tightly.
  5. To cook, gently place 6-8 of the wontons in water, and stir occasionally to prevent them from sticking. They only need about 3-5 minutes to cook.
  6. To serve, place in a large bowl and drizzle with olive oil and chopped herbs and chives. Likewise you can use a sauce like a light tomato sauce, sesame oil, oyster sauce, or nearly anything else
