  1. Grill the bread on both sides and rub with the garlic. Slice the avocado and tomato.
  2. Fry the tomato in olive oil and sprinkle with salt and pepper, then remove onto a plate.
  3. Crack eggs and fry on a skillet undisturbed until whites are set, about 2 to 3 minutes. Season with salt and pepper and transfer to a plate.
  4. Place the sliced tomato and avocado on the toast and then the egg. Cover with a second piece of toast and enjoy!
