Sweet and Spicy Ribs

In this recipe I use fig jam but you can substitute with any other sweet jam or just use
honey. If you don’t have spicy tomato paste, replace with chili sauce or chili peppers. There are some options for how you can cook these ribs: simmer in a pan then fry in the oven as I did, or fry them in a pan with oil for about 10-15 min., turning constantly. Another option is to prepare in a slow cooker or crock-pot, then the meat will be more tender and there will be less hassle. Serve these ribs with white rice with the tasty sweet and sour sauce on top.

  1. Cut the ribs into pieces of 1-2 ribs each. Mix the jam, soy sauce, white wine, sesame oil, spicy tomato paste, garlic powder, grated ginger and lime juice together. Pour everything into a large saucepan, heat, then add the ribs, stir, cover with the lid and simmer on low heat for about 40 minutes. Turn off and let cool in the sauce for 2-3 hours.
  2. After that, put the ribs on a rack with a tray underneath filled with water to 1 cm. Bake the ribs in a preheated 210'C (410F) oven for about 15-20 minutes, turning the ribs over 1 or 2 times.
  3. While the ribs are cooking in the oven, put the pan with the sauce on a high heat and boil down the sauce until thick.
  4. Transfer the cooked ribs to a plate and pour the sauce on top.
