  1. Soak the apricots in hot water for 30 min., then chop finely or grind in a blender and season with curry and pepper. Make a 'pocket' in each breast, cutting the meat in the upper third of the breast. Put prepared apricots in the pocket. Put the chicken skin up in a baking dish. Chop the garlic and beat the apricot jam, garlic, mustard, salt and 2 tablespoons oil (if jam is very thick, make it a little warm). Spread the apricot jam glaze on the chicken breasts.
  2. Put the baking dish in a preheated oven and bake 395 F about 25-30 minutes. Chop the thyme and sprinkle on cooked chicken.
