Smoked Salmon on a Gas Stove-Top

Our family loves fish and especially smoked salmon. In the summer we often smoke fish on our grill! However, now that it’s  winter and very cold outside, of course it doesn’t work (well it does but no one wants to watch the grill for hours when its 0 degrees outside) but we were really hungry for smoked salmon so we decided to find a way to smoke it inside. There are a lot of recipes on the internet for smoked salmon at home but we decided to try it another way.

My husband cut small cider chips and put them in a small disposable foil container and placed these on a cast iron griddle for our gas stove. The griddle covers two burners but he only turned on one side where the cedar chips were leaving the other side off where the salmon would go.

For the rub we used some of our favorite salmon spices and lemon juice. For salmon its good to keep it simple and not put too many spices on the fish or it will overpower the natural flavor.

Once the wood chips started smoking heavily, we put the salmon on the cold side and covered with a metal cooking pan to keep the smoke in. You might need to wrap the pan with aluminum foil if there are cracks for the smoke to escape. At that point we turned the heat down very low and would just check every 10 minutes or so to make sure there was still smoke. When the smoke died down we’d uncover and crank up the heat more.

This was pretty easy and with fish doesn’t take too long, probably only an hour. This is a great way to add some smoke flavor to your dishes in the winter, you can just smoke for 30 minutes and then cook normally if you want as well.
