We love dishes with orzo, they are light, fresh and so tasty! This recipe has easy ingredients and is a great light lunch or dinner! Enjoy!

  1. Dice the tomato then peel the roasted pepper and chop as well. Fry the finely chopped garlic in olive oil for a couple of minutes. Next add the diced tomato and chopped pepper. Fry a few more minutes, stirring all the time.
  2. Finely cut the basil, roast the pine nuts in a dry frying pan.
  3. Boil the orzo in salted water, drain and return to the pan. Add the roasted vegetables with garlic, nuts, cheese and basil. Pour more olive oil on top if necessary.
