Orzo with Asparagus, Cherry Tomatoes and Mozzarella

A great fresh and light dish perfect for spring or summer. Orzo, although a pasta, is not as heavy and really good for a salad. Mozzarella, asparagus and tomato with basil are ideal combination of ingredients. This is a perfect dish to bring to a picnic or potluck because it’s great at room temperature. Simple and delicious!

Instructions

  1. Cut off the solid ends from asparagus and cook in boiling water for 3 minutes, then move to ice water.
  2. Prepare the dressing by mixing the lemon zest and juice, olive oil, chopped garlic in a bowl and whisk.
  3. Cut the tomato and cheese into medium cubes. Cut the asparagus into 2-3 pieces and finely chop the basil.
  4. Boil the orzo as directed on the package, in salted water. Drain, then add to it the finished asparagus, tomato, mozzarella, and basil. Pour the dressing on top, stir, add pepper, salt if necessary and serve immediately.
