Orange Madeleine

My family love madeleines and I bake them a lot many different flavors since its easy and versatile. These madeleines flavored with orange and rosemary will be a perfect Christmas gift, I gave these to friends and family with a small jar of Jalapeno jam, Strawberry Jam or Basil jam. If you want a gluten free version, replace the wheat flour with rice flour. Bon appétit!

Instructions

  1. Melt the butter and cool. Sifted flour and mix with baking powder and salt.
  2. Beat eggs in a mixer along with sugar until you get a fluffy foam. Add orange juice and orange zest, vanilla, rosemary, then gradually add flour, stir, pour the melted butter and stir again. Cover the dough and place in a refrigerator for 1-2 hours.
  3. Spray a madeleine form with cooking oil, add the batter and bake in a preheated 190'C (375F) oven for 10-12 min, or until golden.
  4. Sprinkle the cookies with powdered sugar.
