- small bunch cilantro
- 1 clove of garlic
- salt, pepper to taste
- 1 tsp lemon juice
- 1 tsp lemon zest
- 1 tbsp olive oil
- 2 Portobello mushrooms
- 1 tomato
- Mix in a bowl the finely chopped garlic and cilantro, add the lemon juice and zest, olive oil and salt.
- Sprinkle the mushrooms with olive oil. Top each mushroom with diced tomato and cheese, drizzle dressing on top and add the pepper.
- Cook on the grill for 3-5 minutes.
