Grilled Bruschetta with fried Tomatoes and Garlic

I usually cook bruschetta with fresh tomatoes, but after trying this recipe with slightly fried tomatoes and garlic, I liked it even more! The recipe is very simple to prepare and great for picnics or some dinner party. It can be cooked on an outdoor grill when the weather is great outside, or at home. The perfect Summer recipe!

    1. Sprinkle a little oil on the bread and grill both sides, then rub garlic on one side. In a frying pan put a little bit (2-3 tbsp) of olive oil and fry the finely chopped garlic, then transfer the garlic on a plate and fry the tomatoes in the same pan, then return cooked garlic back. Mix and cool.
    2. Sprinkle a little olive oil on the bread (on side with the garlic), put the sliced cheese on top and grill under a lid (you can do it in the oven too) until the cheese is a little softer (will melt a little bit). When it's done, put a slice or two of tomatoes with garlic on the top, then add salt, pepper, and fresh basil leaves.
