- 1 cup couscous original
- 1 tbsp olive oil
- 1-2 cloves of garlic
- salt to taste
- 1 1/4 cups chicken broth boiled (or vegetable)
- 1/4 cup kalamata olives sliced
- bunch of cilantro leaves
- 1 lime zest
- 1 tbsp lime juice
- In a medium saucepan heat oil, add couscous and minced garlic and cook around 1 min, stirring quickly. Add salt, boiled broth and stir quickly, then remove from heat, add the olives, cilantro, zest, juice, stir and cover. Let stand for 5 min. You can drizzle with olive oil before serving.
