Chicken Tajine with Herbs and Spices

I wrote earlier about cooking with a tajine and here is another recipe that is delicious!There are many advantages to cooking in the tagine and this recipe takes advantage of it by keeping the chicken moist and tender and combining all the flavors of the ingredients put into the tagine. This rich flavor can’t be made in an ordinary pan. After you add the ingredients you just need to cover and forget it until everything is ready. It’s similar to cooking with a crock pot but the tagine gives more flavor and the ingredients don’t turn as mushy as with a crockpot.
This time I cooked chicken legs with a spices. The chicken was cooked for 50 minutes. I added 2 chipotle peppers with adobo sauce to give it spice and some heat. Serve with white rice with the sauce from the tagine on top. If you have the opportunity to buy a tajine, don’t think too long, just buy it, you will be happy with the results!

  1. Cut each chicken leg into 2 parts. Place the tagine on the cook top over medium heat, add the olive oil and butter and fry the finely sliced ​​onion, garlic, herbs and grated ginger for about 5 minutes. Then pour in the turmeric, cumin and paprika, stir, then place the chicken and brown on all sides for about 5-10 minutes. Add the hot chicken broth and chipotle peppers (with a little of the adobo sauce), cover the tajine, and reduce heat. Cook for 50 minutes and serve with white rice.
