Chicken Tajine with Apples and Pears

A tajine is a clay dish with thick walls and a large conical lid. In a tajine you can cook different dishes  such as chicken with dates, apricots, prunes, raisins, figs, olives, pickled lemons, or, as fish dishes, meat (lamb, pork or beef) and vegetables such as potatoes get very tasty with tomatoes or beans, peas, carrots, bell peppers, prunes and nuts, etc. A tajine is not only a clay dish but the dishes that are cooked in it are also called ‘tajine’. Traditionally you cook with a tajine over charcoals, but you can just use a stove. When you are cooking on a gas stove you should definitely put a metal heat plate between the flame and the tajine. Pour a little oil in the tajine and heat it over high heat, then reduce the heat and simmer the meat or vegetables, without opening the lid while cooking. Food cooked in a tajine gives a unique taste, and everything you cook in tajine turns out very tender and juicy due to the aromatic steam. Dishes prepared in a tajine are great to serve along with Moroccan bread-fluffy thick round bread, rice, potatoes.

  1. Fry the saffron in a dry skillet over low heat, stirring, for 2-3 minutes. Then, place in a mortar and grind thoroughly. Add the warm water, 150 ml. and stir well, which will dissolve the saffron.
  2. Cut the chicken into 8 pieces and dice the onion. Preheat olive oil in the base of the tajine and fry the onions in it. Add chicken pieces, peeled cloves of garlic, ginger, cinnamon sticks, lemon zest, cayenne pepper, cumin, salt and pepper. Add the saffron water and add the cilantro on top. Close the lid and cook on low heat for 55 minutes.
  3. Clean the shallots and sauté onions over medium heat in olive oil until golden brown.
  4. Peel the apples and pears, cut into slices, removing the core. Melt the butter in a frying pan, add honey, then apples and pears. Fry over medium heat, stirring occasionally, covering the fruits on all sides with honey for about 3-5 minutes. Then pour the wine, let it boil, turn off heat and sprinkle with ground cinnamon fruit.
  5. Add the shallots and vegetables to the tajine with chicken, cover and cook for about 15 minutes. Serve the finished dish with rice or potatoes, sprinkling the top with sauce.
