Baked Salmon

This salmon can be cooked on the grill in foil as well as in the oven in parchment paper. You can use a cedar board soaked in water for 4-8 hours instead of foil. Different herbs can be used depending on your taste, such as rosemary, marjoram, oregano, thyme, tarragon, sage, basil, or lemon grass. The sauce is aromatic and complements the fish perfectly, just don’t use too many herbs or they will overpower the natural flavor of the fish. Lime juice can be substituted in place of the lemon juice as well. I bake in an oven for about 20 minutes (390F).

  1. Clean the salmon and then sprinkle the salt, pepper, and herbs on top. Pat the seasoning into the fish a little then wrap the salmon in foil, not tightly, leaving room for air circulation, closing the edges. Cook on a grill for 15 minutes and then flip over and cook another 10 minutes. Remove from grill and let rest for 10-20 minutes - salmon will be continue cooking in the foil.
  2. While the fish is cooking you can prepare the sauce. Combine the soy sauce with grated ginger, sesame oil, chopped chili, lemon juice, and finely chopped garlic. Plate the salmon and drizzle sauce on top.
