Baked potatoes with bacon and herbs

A recipe from my childhood, the only difference is that we cook it without the herbs. In Ukraine potatoes are one of the most popular vegetables, and food in general. This recipe is simple, but very tasty and nourishing. The potatoes soak in the flavor from the bacon and herbs. Potatoes can be peeled, but I usually leave the skin on. It’s best to choose a long potato opposed to round ones. Also, this is a great recipe for when you are camping or outdoors. You can prepare them ahead of time and just place into the fire and enjoy a beer while it cooks. Readiness of baked potatoes can be checked with a toothpick, if it goes in easily then the potato is ready. Serve with fresh vegetables or salad.

  1. Finely chop the herbs. Wash and dry the potatoes and cut into two halves. Each half add salt, pepper and garlic powder, and top with strips of bacon and herbs. Wrap each half in foil, put on a baking tray and cook in an oven at 220'C (425F) for about 30 minutes. Then remove the foil, put the halves potatoes with the bacon back to the pan and cook another 15 minutes. Cooking time depends on the size and grade of potatoes.
