Baked Carp with Herbs

I love fish! I grew up in Odessa which is on the Black Sea, so we always had all sorts of fresh seafood as well as from the rivers and lakes. Unfortunately, here in Minnesota where I live now, there aren’t the same choices, especially in the store. Of course there are many lakes in Minnesota and we try as much as possible to go fishing. My husband’s family love to fish  so sometimes I get some fish from them.

I love carp and unfortunately it’s difficult to buy here. Even though it’s not a popular fish to eat in America, the rest of the world loves this fish. But I was lucky that the husband’s family caught 4 carp for me! Yes, I know for some of you it’s hard to understand my happiness 🙂

A couple of carp I just fried with a simple flour, salt and pepper covering, simple but very tasty! The others I marinated and cooked in the oven. Carp has very tender and moist meat so unlike other fish its easy not to overcook and dry out.  Serve with boiled or fried potatoes, vegetables.

Instructions

  1. Mix all ingredients except the fish in a blender and put the marinade on all sides of the fish. Cover and refrigerate for 2 hours.
  2. Lay the fish on a baking sheet and bake in a preheated 200'C (390F) oven for about 30 minutes or until cooked through.
